The crispy/chewy crust surrounds a moist, fluffy and airy crumb. This particular flour and the long fermentation process add an uniqe character to this bread, starting with a very gentle wheat flavour later enriched by the ever so slight tangyness coming from long fermentation. It becomes absolutely addictive when warmed a bit and then dipped in virgin olive oil and sprinkled with sea salt. Excellent for lunch sandwiches, also for the kids. Small size appropriate for sandwiches.
